Jackfruit Tortilla Soup

Ingredients

  • 1 white onion chopped
  • 1 small can of green chiles (heat to your liking)
  • 2 tbsp garlic puree (or minced)
  • 1 can tomato sauce
  • 1 can diced tomatoes
  • 3 cups veggie broth
  • juice of 1 lime
  • chopped cilantro
  • avocado
  • jackfruit
  • 1 can or package of jackfruit (i use prepackaged shredded edwardandsons brand)
  • 1 tsp cumin
  • 1 tsp onion powder
  • 1 tsp garlic powder or puree
  • 1 tsp smoked paprika
  • ½ tsp coriander
  • 1 tbsp liquid aminos (soy/tamari)
  • juice of 1 lime
  • black pepper
  • pink salt
  • toppings
  • vegan sour cream, cheese, cilantro, avocado
Instructions
  1. sauce onions for 5 minutes in water or veggie broth (i don’t use oil)
  2. add can chiles, dice tomatoes, sauce, and veggie broth, cook reduced heat 15 minutes
  3. while waiting toss jackfruit and all spices into a skillet on medium low heat for 5 minutes
  4. when 5 minutes are left on the clock toss jackfruit into soup pot and let simmer together for remaining time
  5. top with cheese, sour cream, tortilla chips, avocado and cilantro
