Vegan Cubano Sandwich

Ingredients
  • 2 cans jackfruit
  • 1 cup cilantro lightly packed
  • 1 tbsp orange zest
  • ¾ cup orange juice
  • ½ cup lime juice
  • ¼ cup mint leaves, lightly packed
  • 2 tbsp garlic puree
  • 1 tbsp fresh oregano leaves, packed (or ½ tbsp dried oregano)
  • 2 tsp ground cumin
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp bragg liquid aminos (soy/tamari)
  • 1 tsp cumin
  • 1 tsp black pepper
  • 1 small sweet onion sliced thin
  • 1 bay lea
Instructions
  1. shred your jackfruit, rinse and add everything to a container or plastic bag and let marinate overnight
  2. heat up a pan with no oil, cook until liquid cooks out and starts to stick to the pan, you’re done
  3. assemble mustard, cheese, ham slices, pickles, then jackfruit and place into a grill pan
  4. use the heavy pan lid to press down and flip after a minute or two to cook each side with marks
